A New Twist on Potato Salad
Warm Red Potato Salad
6 large red potatoes boiled
4 eggs hard boiled and chopped
4 pieces turkey bacon fried crisp and chopped
2 stalks celery cut into 3rds and diced
1/2 onion like Spanish or Vidallia
1 tsp Old Bay Seasoning
1/2 c Miracle Whip or Mayo
1/4 tsp salt
1/4 tsp pepper
Cut the eyes out of the red potatoes but leave the skins intact. Cut in half and boil for 20-25 minutes. Make sure the water is covering the potatoes. Insert a fork in the potatoes to check for doneness. They should be fork tender but not fall apart. Drain them and let cool for about 5 minutes so you are able to pick them up without burning yourself. Chop into cubes.
In a separate pot boil the eggs for 15 minutes and shut heat off letting them sit in the water for an additional 10 minutes. While the potatoes and eggs are boiling chop the celery, bacon, and onion. Place in a large mixing bowl adding the potatoes, eggs, Miracle Whip and seasonings. Serve warm!
