Turtle S'more Mini Cheesecakes

It's funny that I made this dessert today and no one was home. My youngest is visiting with my Aunt and my oldest is staying overnight at her friends house. For dinner the hubby and I had curried chicken salad with pecans and grapes and these delicious Turtle S'more Cheesecakes I found the recipe for on the Kraft newsletter. They are pretty easy to make and are very delicious!

Here's the recipe:

Ingredients:
3/4 c graham crackers crushed
1/4 c butter melted
1 TBSP sugar
3/4 cup Mexican caramel spread (dulce de leche) divided
1/2 c coarsely chopped pecans divided
1 pkg. cream cheese
1 14 oz jet puffed marsh mellow jar
1/2 cup marsh mellows
2 TBSP chocolate syrup

Add one package of graham crackers to a plastic bag and pound into crumbs. Mix the crumbs with the sugar and butter. Press into the bottoms of the lined muffin tin. (Great for taking out aggression) Add 1/2 cup caramel spread evenly over the crusts and sprinkle with some of the pecans.

Mix the cream cheese, marsh mellow cream, and 2 TBSP of the caramel sauce for about 2 minutes. Add evenly to the muffin cups. Top with marsh mellows. Drizzle each with the caramel and chocolate sauce. Top with the remaining nuts. Refrigerate for 3 hours. Try to eat just one!
